Citric acid is used for preparation of mayonnaise, various sauces, canned food, processed cheeses, jams and fruit jellies. It is necessary for сonservation and also is used in production of oils to reduce bitterness. Citric acid is applied as a freshener for wines, liqueurs and lemonades and also for aromatization of soft drinks. Besides, it is used as a taste intensifier for cakes, ice creams, pastry, candies and caramels. In medicine, citric acid is applied for production of the means for mending the energy exchange in a human body and acceleration of metabolic processes.
