Gelatin

Gelatin is a mix proteinaceous bodies of animal origin . It is jellylike substance which is made by water decoction of sinews, sheaves, bones and some other tissues containing collagen (protein) . Gelatin is used for production of ice cream : it prevents crystallization of sugar and reduces coagulability of protein. Gelatin is also used in medicine as a source of proteins for treatment of various nutrition disorders ; in pharmacology — for production of capsules and suppositories; in the food industry for production of confectionery – jelly, fruit jelly , etc. Being a mix of albumens of animal origin gelatin contains 18 amino acids, including glycine, proline, oxyproline, alanine, glutaminic and aspartic acids. They improve metabolism, increase intellectual work capacity and strengthen cardiac muscles, they are one of the main sources of energy of the central nervous system, muscles and brain.
